BEATRICE – A new restaurant is opening in downtown Beatrice, on Wednesday. It was a so-called soft opening Tuesday, for the Coffee Bistro located along the east side of North 5th Street, where Mark and Cindy Ruby are the owners. Mark Ruby spoke with us about the business.

The business will have regular hours of seven a.m. until two p.m., Monday through Saturday, serving coffee, tea, espresso and a lunchtime menu.

The owners also plan to offer special events during the evening such as birthday parties, bridal showers or graduations, along with other activities.
Ruby says the couple felt that the location for The Coffee Bistro, was ideal.

Meanwhile, several store front improvements are underway in downtown Beatrice, part of a community development block grant that is assisting building owners with the costs of undertaking upgrades.
Main Street Beatrice Executive Director Michael Sothan says next door to the new coffee shop, brick repair work is underway at Jane’s Beauty Boutique. New windows are being installed above the Orange Owl Painting Studio. New awnings have been put in place at a building along the west side of Fifth, owned by Mike and Sue McClain. Quilt Stitches recently finished a façade upgrade and work is going on at buildings located at 301 Court and 620 Court.
Recently, a new barber shop called The Strop, opened along North 5th.
